American Grilled Quesadillas

1/2 tablespoons radish, finely diced |

1/2 tablespoons red onion, finely diced |

3 scallions, finely sliced |

1/2 tablespoons fresh cilantro leaves, minced |
| • |
1 teaspoon jalapeño pepper, minced |

the juice of 8 limes |
| • |
salt to taste |

8 flour tortillas |
| • |
2 cups grated Monterey Jack cheese |
| • |
1/2 cup cilantro, minced |
| • |
1/2 cup pickled jalapeño peppers, finely chopped |
| • |
oil as needed |

Directions:
Combine all the salsa ingredients in a stainless steel bowl. Cover,
refrigerate, and marinate for at least 1 hour.
Brush a griddle top on medium fire with the oil, and place 4 of the
tortillas on it. Divide the cheese, cilantro, and peppers among the
tortillas, in that order, spreading them within 1 inch of the edges of
the tortillas. Top each with one of the remaining tortillas.
When the bottom tortilla is light brown, flip the whole thing, and
brown the second side. Cut into 8 pie slices and serve with the salsa. |
